Adega Quinta Couselo

Winery

Upon arrival in the winery, a especial stalk removal process begins that eliminates damaging the grapes and hence prevents the wine acquiring a herb flavour.

The grapes then drop into a low-pressure pneumatic press that extracts the must; The resulting liquid then flows into an isothermal tank for static mud removal.

A fterwards, fermentation takes place , with autoctone yeasts, controlling the temperature at 17º-18º C. Once fermentation is over, the following processes are carried out: clarification, stabilisation at cold temperature, a-microbic filtration and bottling.
